Dough ball resting

Dough Resting Tips. Relax Gluten & Enhance Flavor. Rolling Wonder

Why should you rest dough?

Resting dough is one of the most underrated steps in baking. Whether you're making pasta, pie crust, or pizza, giving your dough time to rest relaxes the gluten network, making it easier to roll out thin and even — and dramatically improving the final texture and flavour. As a rule of thumb: 30 minutes for pasta, at least an hour in the fridge for pie crust, and 1–2 hours for pizza (or overnight in the fridge).

How Long Should You Rest Dough?

The resting time depends on the type of dough:

Dough Rest time Where Why
Pasta 30 minutes Room temperature, wrapped tightly Relaxes gluten for thin sheets
Pie or tart crust At least 1 hour Fridge Firms the butter, prevents shrinkage
Pizza 1–2 hours, or overnight Room temperature, or fridge Relaxes gluten; overnight adds flavour
Cookie dough 30–60 minutes Fridge Less spreading, more flavour

What Happens During the Rest?

During resting, gluten strands that tightened during kneading loosen and realign. Water fully hydrates the flour particles, and enzymes begin to develop more complex flavours. The result? A dough that rolls out with almost no resistance — and a finished bake with noticeably better texture.

How do you rest dough properly?

  • Always wrap or cover your dough tightly to prevent a dry skin from forming
  • Rest pasta and bread doughs at room temperature; rest enriched and laminated doughs in the fridge
  • Don't rush it — even 15 extra minutes makes a noticeable difference
  • If the dough springs back when you try to roll it, it needs more rest

What's the best way to roll rested dough?

Once your dough has rested properly, the rolling pin you use has a real impact. A smooth, weighty rolling pin glides effortlessly over relaxed dough, giving you an even thickness without tearing. At Rolling Wonder, we craft rolling pins from premium hardwoods — each one balanced for a natural rolling motion that makes the process genuinely enjoyable.
